About Maria

María José Jaramillo is a passionate agave spirits expert and mixologist who brings warmth, heart, and deep knowledge to every glass she pours. With over a decade of immersion in the food and beverage industry, she has developed an impressive range of expertise in mixology and the ability to create and tailor craft cocktails that tell a story. Born in Ecuador and raised between Chicago and her homeland, she grew up moving back and forth between the two cultures. That rich bicultural journey opened her eyes to the beauty of mixology — the way flavors, stories, and people come together in a single drink — and she fell completely in love with it.

Since 2020 María José has been consulting on agave spirits, helping bars, restaurants, and enthusiasts discover the magic of tequila, mezcal, and beyond. With more than seven years fully immersed in the world of agave, she is a certified Master Mezcalier through the Asociación Protectora de Mezcal A.C. in Mexico City (2019). She also earned her in-home mezcalera certification after living and working hands-on in Jalisco, Mexico for four months — harvesting agave, learning traditional roasting and distillation, and deepening her respect for the plant and its people. In 2020 she completed specialized gastronomic training in artisanal mezcal through the Gobierno del Estado de Oaxaca.

María José has brought the structure and creativity of professional mixology to Elawa Farm, designing custom craft cocktails for guests that perfectly match each event’s theme, flavors, colors, and — most importantly — pair beautifully with the seasonal food from the farm. She combines true professionalism with an approachable, heartfelt style, making complex ideas feel fun and accessible so everyone leaves feeling inspired and confident to explore agave spirits on their own.
